Nigerian Chef Hilda Baci Sparks Debate Declaring Nigerian Jollof Better Than Ghana's


A fiery debate around West African cuisine has ignited thanks to candid comments made by Nigerian chef Hilda Baci. The Guinness World Record holder recently stated she finds Ghana's beloved jollof rice lacks flavor compared to her home country's version. 

In a podcast interview during her first ever UK trip, Baci insisted "Nigerian jollof is better than Ghanaian jollof." She recounted trying Ghanaian jollof during past visits and in cooking competitions.

According to the chef, Ghanaians focus less on building complex layers of flavor compared to Nigerians who "don't play" when it comes to infusing their jollof rice.

She gave the example of how Smokey scents are added to Nigerian jollof but often omitted from Ghanaian takes on the dish.

While many found Baci's blunt remarks amusing, some Ghanaian foodies took offense, flooding comments asserting their national jollof as the definitive choice. They jokingly mocked Nigeria's penchant for very soupy, oily jollof swimming in spices.

Some critics also referenced how Baci didn't hold her past cooking world record for long. And mastering lengthy cooking doesn't make one the authority on best flavors.


Nonetheless, this lively discourse around West African cuisine shows how passionately these nationals feel about food that's a deep part of their culture. The debates reveal how personally people tie their identity and pride to local dishes.

No matter which side they stand on, the mutual appreciation for heritage coming through loud and clear! Perhaps the two varieties can peacefully co-exist as special in their own way.
